Hamachi French Kiss Melon
6 oz
hamachi slices, sashimi style (1/4-inch thickness)
French Kiss Melon or cantaloupe brunoise (very fine dice)
1/4 cup
chervil (fresh sprigs)
1 cup
virgin olive oil
Course sea salt to garnish
Chef's tip:
French Kiss melon is a certain type of melon. Feel free to use any kind of ripe seasonal melon for this salad. For the hamachi, go to only the highest quality fish market. You can substitute fresh bass. Most importantly, the fish has to be very fresh; it should look crisp and clear, not sticky, and should never have a strong odor of fish. If you have a favorite sushi bar the sushi chef may be willing to sell you the fish already cut sashimi style.
Procedure:
1. Place the sashimi-style hamachi on a platter. Garnish each piece with a small amount of diced melon, chervil, drops of olive oil and granular course sea salt.
2. Serve immediately and enjoy.
